Las mañanas de San Fermín poseen un encanto especial en el primer piso del número 44 Bis de la Plaza del Castillo El Baile de la Alpargata es uno de los actos más emblemáticos del Nuevo Casino durante las fiestas de San Fermín y forma parte de la idiosincrasia mas castiza de las fiestas. No nació por casualidad, si no que forma parte de la evolución de unas costumbres que han conformado una parte importante de la vida del Nuevo Casino. El inicio se dio en la costumbre de desayunar después del Encierro, cuando los socios acudían al Casino para desayunar chocolate con churros. Con el tiempo estos desayunos se empiezan a amenizar con música, y posteriormente se acaban convirtiendo en un pequeño baile de entretenimiento. Por aquellos años se exigía, como a todos los actos del Casino, asistir bien vestidos, pero muchos de los socios que habían corrido el Encierro calzados con «alpargatas», que tenían las suelas de cáñamo y resultaban ideales para correr pero no muy adecuadas de acuerdo con la rigidez de las ordenanzas del Nuevo Casino, aparecían a desayunar con dicho calzado saltándose la normativa. La denominación de Baile de la Alpargata parece ser que surge como consecuencia de la ocurrencia de alguna persona y acaba siendo aceptado popularmente quedando como nombre adoptivo, aun cuando en la actualidad este tipo de calzado ha caído en desuso. En honor a este acto, en el año 1998 se crea el Premio La Alpargata de honor, que se otorga a la ganadería que haya corrido el mejor encierro. El premio lo deciden los socios.
